I was on the search for taco seasoning from scratch when I found the recipe below.  I like the seasoning you can buy at the grocery store in the package, but I felt it had to be easy enough to make from spices we already had in the house.  This recipe is SUPER easy to make and is perfect for dinner as well as lunches!  All in all the recipe is very healthy.  I ate A LOT of taco salads when I was doing the whole wedding / weight watches diet a couple years ago.  Although I got a little taco salad’ed out in 2011 it is still a go to dinner in our house every couple of weeks.

Ingredients:
Salad
1 can Black Beans
1 pkg Ground Turkey

Taco Seasoning –
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons cornstarch
2 teaspoons kosher salt
2 teaspoons paprika
1 teaspoon ground coriander
1/8 to 1/4 teaspoon cayenne pepper (depending on how spicy you want it)

Directions:

This recipe makes about 5 servings.  Here’s all you’ve got to do …

Make your salad.  I use romaine lettuce, red pepper, yellow pepper, red onion and cucumber.

Brown your ground turkey (you can also use ground beef if you want).  Meanwhile combine your spices in a small bowl and put the black beans in a pan to cook/warm on the stove top.  Once the meat is browned add the taco seasoning and about 1/4-1/2 cup of water.  Mix the spices, water and turkey well.  Allow it to simmer until most of the water has evaporated or been absorbed by the meat.  Drain the beans once heated through and add them to the turkey.

I like to portion out the salad first and then scoop the turkey/bean mixer on top.  Serve and enjoy!  I always serve the salad with corn chips.  The husband and I both like to crumble a few of the chips over the salad for a little extra crunch/salt/yumminess.

It was a whole 16 weeks since I last blogged until last week  … *hangs head in shame*.  I have been thinking about blogging and I even had a few posts 90% completed, but just couldn’t muster up the energy to complete them.  BUT here is the thing … I am back and have some great new tidbits to share with you.

For starters I guess I should provide you with my REALLY GOOD excuse for being an absentee blogger … wait for it … wait for it … are you ready?!?!

I’M PREGNANT!!!

Oh wow, oh my, yup, I just put that out there on the world wide web for the world to see!!  The husband and I are beyond thrilled to be adding a new member to our little family.  I’m not so sure Sophi, our dog, is going to feel the same way come December.  Poor little pup is about to have her world severely rocked.

At 22 weeks, I am just a little over 1/2 way through the pregnancy and it has been a wild ride so far!!!  The first trimester took a lot out of me.  There was morning sickness that lasted all day and “power naps” after work that were always 2-3 hours.  Luckily the second trimester is treating me a lot better than the first!  I feel like myself again … except that my clothes no longer fit and when I look down I can see my belly sticking out.  LOL.  So there you  have it … my excuse for not blogging.   Baking the bun in the oven briefly took precedence over blogging.  =)

I have a number of fun stories, tidbits and baby related projects to share with you in the coming weeks so I hope you will forgive me for being an absentee blogger.

In May we went to went Ixtapa, Mexico with my sister and brother in-laws for a little vacation.  It was a lovely vacation and exactly what we needed after a busy winter!  On our last day the husband and I sat by the pool and soaked in the view as well as the quiet.  I wish I could go back right now!!!!

Get it?  Nooks and crannies?  Yeah, I know, I am horrible at blog titles!  After finally getting around to purchasing and hanging the sunset canvas wrap it was time to finish up the nook in our dining/living room area.  When the 10% coupon from Crate & Barrel arrived in the mail I could barely wait for the husband to get home from work and to give sign off on purchasing the sideboard.  The sideboard (aka a china cabinet or buffet) completes our dining set, which previously included a dining room table (with leaf, which come in handy!) as well as a wine rack.  The sideboard not only completes our set, but also gives us extra storage for all our serving platters/bowls/dishes/etc.

Now the space looks appropriately filled.

This sideboard totally makes our condo look like real adults live here.  AND we had the perfect number of picture frames to place on the sideboard so no additional purchases were necessary.

My sister-in-law was giving Dallas, the horse, a little love when I snapped this photo last weekend.  As I was editing photos I quickly shared the black and white version with the in-laws.  I was so pleased with their reaction it seemed like the perfect photo to share as I get back on track with blogging!  Sometimes taking the color out of a photo makes the moment captured that much more beautiful.
